Mediterranean Herbs Popcorn








I love love love late night snacks. I should not, but I do. Give me chips, I don’t care about my diet, just give me a bag of chips (link chips addict) and I’ll eat it all tonight. At least that’s what usually think at the moment. The next day I’m not so proud of myself. I mean, you can just eat a whole bag of chips and feel good and healthy after, right?

So I’m trying to find healthier alternatives. Popcorn can be healthy. It’s not if you eat store bought butter flavoured popcorn, but if you do it at home it can be fine. But I’m not a nutritionist though, so who knows.

I put together some variation of this recipe most week to curb(?) my salty and crunchy cravings. It works, since I’ve been eating way fewer chips lately. Mediterranean herbs is my go to popcorn flavor in the last few weeks, but the possibilities are endless.

In the past I’ve tried to do a Thai inspired flavor that was pretty successful. I also used taco seasoning and other spice mix and most of it was delicious.

For this recipe I’m using a Mediterranean herb mix, which is working fine, but I can only imagine how amazing it would be using fresh herbs. I’m definitely trying this in the summer. You can also make your own dry herb mix, I’ll list the ingredients below. Same goes for the Parmesan, it is just fine with regular grated Parmesan but would be amazing if freshly grated on top of the popcorn.

Ingredients
Mediterranean herb mix
equal portions of:
Dried oregano
Dried rosemary
Dried thyme
Grounded fennel seeds

Popcorn
1 cup of unpopped, unflavoured popcorn
Some olive oil
Parmesan
Brown paper bag

Steps
Mix ingredients for the herb mix.

Place the uncooked popcorn in a brown paper bag and cook in the microwave over the popcorn setting or until you stop hearing it pop.

Pace popped popcorn in a big bowl and drizzle some oil on top. Add a spoonful of the herb mix and some Parmesan. Mix the popcorn and repeat last step until the popcorn is flavoured to your taste.

(The proportions are pretty vague but it’s just because it really doesn’t matter if you had 1 teaspoon or 2 tablespoons, it all depend on your taste)
